No Kids Allowed

Liam is off at Nana and Papa's, and Garrett is at Kanakuk. Its just the two of us at home together. We are doing really exciting things like:

-taking really long naps.
-having meals composed entirely of junk food.
-watching the ENTIRE first season of 24.
-wearing PJs all day.
-deep cleaning bathrooms.
-talking about the kids, looking at pictures of the kids, making plans for when the kids get back.

We're pathetic.

A Favorite Snack

Whenever we're craving a salty treat...or dinner's just taking too long to cook, we make these Roasted Chickpeas. Before you run for the hummus hills, give it a chance! Its more like French Fries, but round and HEALTHY! And for you haters out there, YES- EVEN GARRETT LIKES THEM (that's his hand in the picture!)



Here's how to make your own:
You need:
1 can chickpeas (or garbonzo beans if that's how you roll)
2 T olive oil (or Pam spray, or veggie oil...whatever)
a seasoning mix you love (we love Spike!)

Preheat the oven to 350. Toss the peas, oil and seasoning together in a small bowl. Then, spread them onto a cookie sheet in a single layer. Place them into the oven, and bake until toasty and brown (usually about 20 minutes.) Serve hot, or cool and store in a covered container in the fridge.

I think you could probably do this in the broiler and get a good toasty color on them, but in the oven they get a little crispy bite to them! I'm sure they are great sprinkled on salads or garnishing lovely grilled fish...but at our house, these chickpeas never even make it out of the kitchen!

A Goodbye Par-tay!







On June 11th, we got together with friends to wish our friends Stephanie, Nolan and Sophia good luck in Austin! It was an evening filled with music, ping-pong, and a fierce water gun war! Special thanks to Joel and Joe for helping make their last days in Dallas so special. (The furious little ping-ponging girl is Sophia. Nolan is at the ping-pong table, and the lovely smiling girl in the white chair is their mother, Stephanie.) We love you all and wish you well in Austin!

Lake Palestine!




June 3rd and we were on the road! The family loaded up and headed on over to Lake Palestine to meet up with our extended family. It was a day of fun, sun and ducklings galore! Thanx to Aunt Fannie and Uncle Fatt for the pics!

Earth Day!



The boys came out on April 24th to help Mommy and the Spanish Club celebrate Earth Day by planting a tree. Special thanks to the Pate Family for donating such a beautiful Japanese Maple! It is lovely to look out my classroom window and see such a beautiful symbol of compassion.
